One of the best-selling dishes – whether in the restaurant or for take-out – is the famous roasted chicken, as millions of Peruvians have tasted it on special occasions such as birthdays, family gatherings, among others.

The roasted chicken, crispy fries, sauces (mayonnaise, chili, ketchup, mustard, etc.) and the portion of salad are enough to delight the palate of every citizen. It has even captivated other countries in Latin America and Europe.

Who and where did the roasted chicken originate?

The creation of this dish dates back to 1949, thanks to its creators Roger Schuler and Franz Ulrich. The former provided the idea, while the latter put the undertaking into practice.

Schuler opened -in the aforementioned year- his restaurant La Granja Azul in the outside area of his country house, located in Santa Clara. Here he offered this roasted chicken that was cooked on an iron rod.

How was this famous Peruvian dish created?

The quality and service of this business allowed up to 3,000 people to be served daily, but the method used was too slow to meet the high demand. A more efficient way to cook the chickens in large quantities was needed.

That's when Ulrich and his innovative new cooking system appeared, which consisted of placing the chickens on various rods inside an oven that rotated on its own axis. This allowed the food to be cooked evenly.

The method was effective and caused this dish to become very popular. Even today, it can be seen that there are various businesses offering roasted chicken in different areas of Peru.
